With any diet, I would modify it to fit your body and unique needs, so even if a diet "allows" fruit and honey, if it gives you problems then exclude for a few months, then introduce and see if you have any reactions. The same with kefir, nuts, yogurt or even protein - if you can't tolerate it then give yourself a few months and try again (unless you have a severe life threatening food allergy of course!).
We did the GAPS intro for 3 days, but my kid just refused to eat the broths or much of anything - she's 2 after all. We both had fever and went through withdrawal like heroin addicts. Sugar is powerful stuff! I then went to just the regular GAPS diet, and gave her the little almond pancakes and avocados and blended salads, etc., which she ate.
She will not drink green vegetable juice, though I do make it for myself. I'm hard-core with my juice, and just use dandelion leaves, ginger root, and a few stalks of Celery to wash it all through the juicer. It's tastes like hot dirt! It's terrible! :-) Dandelions have incredible healing properties and have not been "altered" to be bug resistant or grow huge and fast. I eat mostly dandelions, though they are bitter and hard to choke down (that's the beauty of juice). There are many documented examples of cancer going into remission because of dandelions, which makes me think they are anti-fungal. Arugula is delicious to eat, spicy, and also medicinal.
For lunch I will also have a handfull of almonds and/or a cup of kefir, I just choke down all the leaves first. I take 2 tbsp coconut oil a day as well, and use it to moisturize. You can eat meat as much as your body needs/can tolerate it. I only eat meat at night, and sometimes eat eggs for dinner, but this is a personal choice. I would advise buying the best quality meat you can afford, but always organic as this doesn't have hormones or antibiotics (we hope). I actually order mine, organic and 100% grass fed. Livestock is not meant to be force-fed soybeans and corn, and the resulting fat on the animal is not really the best for us. I could probably just drink kefir and eat eggs and be perfectly happy at this point. You think you will waste away to nothing if you don't eat 6000 a day (I was eating at least that), but your system will level out and once the candida - and in my case tapeworms!! - clear out, food will be an afterthought. Well, at least for me that is the case. My whole day was consumed with eating. I was eating constantly, even getting up at 3 am to eat. I slept 6 hours straight last night like a baby! Ah...
Speaking of worms, the DE is really not that bad. It tastes chalky at first, and then a slight clay/dirt aftertaste. Of course if you mixed it in tea or milk or some sort of beverage it would mask that. I take mine in water because I'm always in a hurry, but I really don't think it's bad at all (compared to dandelion juice - haha!).
My chickens are divas and totally spoiled. I live in Dallas, TX and it is legal to have hens in the city if they are not a public nuisance. They roam around my yard so eat grass and bugs, and I also feed them vegetable scraps and kefir. My kid picks them up and hugs them, and my dog plays in the backyard with them - it's crazy! I've been eating raw eggs in milk for about 8 years - I have two a day - and have only good effects to my hair and skin, so I don't know about the raw whites - seems like overthinking things to me! I would not recommend roosters, as they tend to prompt public nuisance complaints, eat tons of food, and don't lay any eggs! Oh, and they tend to be mean to the ladies.
I don't do yogurt, I make kefir from real kefir grains, which are an ancient method of preserving milk from the Caucasus mountain area. The grains are a biofilm of 100+ bacteria and yeasts, and actually grow with each batch. You don't have to keep buying starter, and it tastes like buttermilk. I use grass fed raw unpasteurized cow milk, but that of course is not legal to sell in every state. You can go to http://www.realmilk.org

I've been making young coconut kefir from young coconuts that health stores sell. The processed, pre-packaged stuff I hear makes terrible kefir and it's pasteurized so all the good enzymes are dead. I would use the raw, fresh ones. They are white and cone-shaped at the top. I hammer a hole in it with a nail and drain the juice - you get several cups out of each coconut. If you want to take the time to crack it open it has soft meat inside that can be used for yogurt or just eaten. I've been using a probiotic pill starter to ferment it as well as kraut, but I ordered my water kefir crystals to get more variation in my strains of bacteria - they also have 60 - 100 strains. Don't add any Sugar - there is plenty to feed the bacteria for 24 - 48 hours. It will be slightly sour, milky color and almost carbonated when done.
I do not take any supplements or vitamins, other then DE "dirt" and occasional Colloidal Silver when I feel fatigued. I've been through so many hundreds of dollars of crap and have noticed NO difference in my health - not even a placebo affect! :-) If you have a Candida Overgrowth it can utilize vitamins and even probiotics to live once you've taken the sugar and starch away. Some strains will eat protein too, so you have to be careful with that as well. I assume that is the point of the GAPS intro diet. You starve it down to free up your immune system, and then once your gut has some space, you reintroduce the probiotics to fill in the empty places and let your immune system heal your body. Also I've heard of people using raw unfiltered apple cider vinegar before meals to aid in digestion but I have no direct experience with that. I burned a melanoma off my leg with ACV but that's as far as my use of it has gone.
So I eat nuts, kefir, and meat, but you would need to assess if your body is strong enough to assimilate these things, as they can feed candida and stress your immune system.

I've also made these using steamed squash or eggplant instead of the psyllium, and those are also good!
Also instead of snacky crackers I de-stem kale and rip into pieces, then CO and Sea Salt . I bake at the lowest my oven will go (170) so they won't burn and bake for maybe 1.5 hours? You can bake faster at 250 but have to constantly watch them and keep flipping or they burn. These are crispy and delicious, and you would NEVER believe that it's kale.
Another tip is to steam cauliflower then put in the blender and season to make a mashed potato substitute. I actually prefer these to potatoes, especially with butter. I add kefir and chives and I swear to you it tastes like sour cream and chives potatoes. The longer it sits in the fridge, the longer the kefir propagates, and will taste more like sour cream.
You can use kefir as a base for ranch dressing for your salads or dipping sauce.
