This question of diet and low carbs is very confusing. Each ND has a slightly different candida diet. On most regular candida diets, a little of slow carbs is allowed, fast carbs like refined Sugar and fructose are not. On diets for chronic intestinal inflamation (Crohn's etc.), it's the slow carbs that are prohibited--because since they take longer to digest, they tend to ferment more in the intestines and increase inflamation-- whereas the fast carbs like fruit are allowed in limited quantity.
Since I can't say that I see any improvement when I restrict carbs, I eat a moderate amount of slow and fast carbs (fruit only, no refined sugar).
Anyway, carbs are what feeds good bacterias and bad bacterias alike. When you restrict carbs, you starve the good guys as well as the bad ones. Think about it.
