Ellagic acid is found naturally in reaspberries and pomegranates. It attacks yeast by inhibiting the chitin synthetase enzyme which is necessary for cell wall formation in yeast. Thank you for sharing that. It turns out that many plant polyphenols are naturally anti-fungal. The reason for this is the same reason we humans have an immune system. Plants need a way to keep themselves disease free and keep harmful fungi at bay, and one way they do this is through the production of polyphenols. The list of anti-fungal polyphenols likely runs in the hundreds, if not thousands. Of course, each one has unique properties and usually a specific chemical mode of action.
