Thank you for sharing that. It turns out that many plant polyphenols are naturally anti-fungal. The reason for this is the same reason we humans have an immune system. Plants need a way to keep themselves disease free and keep harmful fungi at bay, and one way they do this is through the production of polyphenols. The list of anti-fungal polyphenols likely runs in the hundreds, if not thousands. Of course, each one has unique properties and usually a specific chemical mode of action.
